At every family get together each one of us is typically asked to bring a specific food item to contribute to the event. This Thanksgiving Heidi got asked for her famous green bean casserole, Jessica was asked to do her annual banana cream pies, cheesy potatoes, and sweet potatoes, and me, of course, it was one and the same: a few liters of soda and some plastic cups. Is this a sign that family does not trust my cooking ability? Or perhaps it's just because I have none. Well this year I decided that it was time for a change- I was going to bring something edible- so I made these easy, yummy cheesecake stuffed strawberries which my youngest sister, Krista, said "were delicious!" Here's what you need:
1 pound of strawberries (the larger, the better)
8 oz. of cream cheese, softened
3 1/2 tablespoons of powdered sugar
1 teaspoon of vanilla extract
Graham cracker crumbs
Step 1: Wash and dry strawberries. Using a paring knife, cut off the top of the strawberry and carve out the center so that it is hollow. Do this to all of your strawberries and set aside (as shown in the photos above).
Step 2: In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. If you don't own a piping bag, like me, add cream cheese mixture into a Ziploc bag and snip off the corner in order to fill your strawberries.
Step 3: Fill your strawberries with the cream cheese.
Step 6: Place your dessert into small cupcake papers for easy, mess-free servings.
These are so simple and make a great dessert. The kids loved them too! Hope you enjoy!
